Proper drying is essential to reduce the moisture content, which helps in better oil extraction. In some traditional setups, a mechanical grinder known as a “ghani” or a “kolhu” is used. The ground mustard seed powder is placed into the ghani or kolhu, where it is pressed to extract the oil. The cold pressing method involves slowly crushing the seeds to extract oil without applying heat, preserving the oil’s nutrients and flavor. The extracted oil is collected and filtered to remove seed particles and other impurities. This is often done using a fine cloth or a sieve.
